Mauviel's Hammered Copper Jam Pan is a summer essential in our kitchen. This year we replaced the 9.5 qt (10 litres) hammered copper jam pan with the larger 17.4 qt (18 litres) pan. In fact, the bigger the bottom diameter of the pan, the faster the excess of water can evaporate. To evaporate the water from four kilos of fruit, you need a lot of energy. This can be done with a gas burner only. Our 30cm 8.4kW double circle gas burner is the best choice. The fast heating and constant temperature allows you to prepare 4kg of fruit jam in only 1 hour.
Made of heat-responsive copper, an even heat distribution is achieved. This helps to transform fruits into delicious jams, jellies and preserves. One kilo of rhubarb, 3 kilos of strawberries and the same amount of sugar make an unparalleled jam and this without any gelling agent. Depending on your preference, the jam is heated up to 105°C or to a maximum of 106°C. At 105°C it is still slightly fluid, whereas at 106°C it is already a little more solid. However, the 106°C may only be reached for a short time.
